Chicken Crust Tortilla Pizza

A thin sheet of seasoned ground chicken, seared to a deep brown crust, sits on a crisp tortilla base in place of dough. Tomato sauce, melted mozzarella and sharp parmesan settle into the meat, with oregano and a low chili warmth running underneath. It eats savoury and substantial, the snap of the tortilla edge playing against the tender chicken.

    Heat the oven to 150°C. Set a wire rack on a sheet pan.

    Combine the ground chicken, egg white, salt, garlic powder, onion powder and red pepper flakes in a bowl. Mix for 60-90 seconds, until tacky.

    Divide the mixture into 3 portions of about 161g. Spread one across each tortilla in an even 5mm layer, right to the edge.

    Heat 5ml vegetable oil in a 25cm nonstick or cast-iron skillet over medium-high until it shimmers.

    Lay a tortilla into the skillet chicken side down. Press flat with a spatula for 30 seconds.

    Sear for 6 minutes, until the chicken is browned and releases cleanly from the pan.

    Lift the pizza out with a wide thin spatula onto the wire rack, chicken side up. Wipe the skillet, add 5ml fresh oil, and repeat with the remaining two tortillas.

    Blot the surface of the chicken with a paper towel.

    Spread 30ml pizza sauce over each, leaving a 1cm border. Top with the mozzarella, parmesan, oregano and any other toppings.

    Bake for 6 minutes, until the cheese is melted.

Notes

Mixing until tacky is what binds the sheet — skip it and it cracks apart when you lift it out of the skillet. The egg white sets as it heats and firms the sheet further; a whole egg works in its place but adds fat and a little more moisture. Weigh the three portions rather than eyeballing the split; the layer wants to be about 5mm, and a lopsided split shows up as one torn sheet. Don't lift or probe during the sear — the crust that forms is what holds the sheet together, and it releases on its own once set. Wipe the skillet and add fresh oil between sears or the next pizza steams instead of browning. Doneness is settled by the sear, not the bake: a sheet this thin is well past 74°C after 6 minutes in direct contact with the pan, so the oven step is only melting cheese. The wire rack is what crisps the tortilla — air reaches the base instead of it sitting on hot metal. At 150°C the cheese melts without browning. The sear is the bottleneck — one skillet means roughly 20 minutes of sequential searing before anything goes in the oven; a second skillet cuts that to about 10 and costs one extra pan to wash. Blot the chicken before saucing, since surface moisture from the sear under a thin sauce is what makes the middle soggy. Keep the sauce to 30ml per pizza; more and it soaks back into the crust. Off-the-shelf ground chicken is usually a thigh/breast blend around 8-10% fat, which is right here; if the package says extra lean or breast, work an extra 15ml oil into the meat. Sodium runs high, mostly from the salt in the meat plus the cheeses — the salt doubles as the binder, so cut the parmesan first. Wet toppings (mushrooms, peppers, onions, pineapple) should be pre-cooked or sliced paper-thin; pepperoni, olives and jalapeño go on raw.
